Yogic Energy Bites – Vegan, Gluten-free and Full of Goodness!

Enjoy these yummy, nutritious, prana-filled date and nut goodies, made with love and wholesome ingredients.

Prep Time: 20 – 30 minutes

Yield: Approximately 30 pieces

Ingredients

  • 1 Cup Mixed Nuts (Almonds, Cashew Pieces, Walnuts Pieces, Whole Green Pistachios)

  • 2 Cups Cooking Dates (pitted)

  • 1/2 Cup Dried Apricots

  • 100 GramsDark Chocolate (90% used, but you can choose what you like)

  • 3/4 Tsp Cinnamon powder

  • 1/2 Tsp Cardamom powder

  • 1/2 Cup Shredded Coconut (unsweetened)

Instructions

  • Soak the pitted dates in 1/4 cup of water and let it sit for 15 minutes to soften.

  • Roast the mixed nuts (minus the coconut) in a pre-heated oven on 250 degrees celcius. Can also roast them in a pan.

  • Using a food processor, to process the soaked dates to a smooth paste (drain the water first). Empty the paste into a heavy pot.

  • Add the apricots, all the roasted nuts and cook on medium to low heat.

  • Add dark chocolate to the paste in the pot and mix it well.

  • Cook until the paste is thick – approximately 5 – 6 minutes.

  • Add cinnamon powder and cardamom powder.

  • Mix well and remove the pot from the stove.

  • Divide the mixture into 2 equal parts. Roll each part out into long rolls (like swiss rolls).

  • Sprinkle coconut in a try or on a wooden board and roll the fruit and nut logs in coconut until they are well coated.

  • Refrigerate the rolls for a couple of hours, then cut them into 1/2 thick circular pieces and serve.
